It feels like I haven't been able to ignore it in the last few weeks: the veggie roll! Whether on Instagram, TikTok, or Pinterest—the pictures and videos everywhere have been appealing to me. So it's no wonder I finally gave in and tried the recipe myself.
And what can I say? Ingredients for two rolls of happiness – this is what you need for the recipe
What you need for preparation:

180 g carrots 🥕

1 zucchini (approx. 250 g) 🥒

100 g light grated cheese
-
300 g cottage cheese (1% fat)

1 egg 🥚

Spices of your choice (e.g. vegetable broth, tomato spice or Vegeta)

Bake, roll, enjoy: This is how easy it is to make the Veggie Roll
1. Prepare vegetables
The carrots and zucchini are first finely grated, as this ensures a nice texture and even baking later.
2. Mix everything together
Combine the grated vegetables with the egg, grated cheese, 300g cottage cheese, and seasonings. The mixture should be moist, but not too runny.
3. Off to the tray
Line a baking sheet with parchment paper. Spread the mixture onto it and shape it into a rectangle approximately 1 cm thick.
💡 Additional tip: Lightly grease the paper so that the roll can be removed more easily later!
4. Baking
Preheat the oven to 200°C fan/convection oven and bake for 30–35 minutes. Important: Open the oven door briefly during baking to allow the steam to escape—this will ensure the roll is nice and crispy! 🔥
5. Cool & turn over
After baking, let it cool down briefly, carefully turn it over and slowly peel off the baking paper.
6. Fill & Roll
Divide the baked mixture in half, spread with the remaining cottage cheese (200 g), season to taste – and then carefully roll up.
And voilà: Your veggie roll is ready to serve!
My conclusion: A dish that should not be missing in any recipe book
Whether as a hearty start to the day or as a quick, filling lunch – the Veggie Roll is always the right choice. It's easy to prepare, can be topped with a variety of ingredients, and tastes delicious even cold. The combination of cottage cheese, egg, and cheese also makes it packed with protein—perfect for an energy-packed day! 💪🏼
