Whether for brunch with friends, as a side dish at a barbecue, or as a light dinner in the garden—this quiche is a true all-rounder! For the floor:

600g potatoes

1-2 tablespoons olive oil for greasing

Round casserole or springform pan
For the filling:

3 eggs
-
approx. 400g minced meat or a vegetarian alternative
-
200g crème fraîche
-
150g feta or mozzarella
-
3 spring onions
-
Salt & Pepper

🧑🏼🍳 Step-by-step instructions: Crispy, creamy, irresistible
1. Prepare potatoes
Cook the potatoes until soft and let them cool completely.
2. Form the base
Line a baking dish with parchment paper. Place the cooked potatoes in the dish and flatten them with a container (e.g., a glass). Crush and smooth with a fork or your hands. Pull the edges up slightly.
3. Mix the filling
Mix the 3 eggs together with the crème fraîche and the crumbled feta or grated mozzarella in a bowl.
4. Prepare vegetables and minced meat
Brown the (vegan) minced meat in a pan. Slice the spring onions into thin rings and fry them briefly.
5. Complete the filling
Add the leek and minced meat to the egg, cream, and feta mixture, mix well, and spread evenly over the potato base.
6. Baking
Bake in a preheated oven at 180°C (top/bottom heat) for about 40 minutes. 
7. Cool & Serve
Let the quiche cool slightly, then carefully remove it from the tin and cut into pieces.

My verdict: Sooooo delicious! This quiche has the potential to become my new go-to recipe! It's easy to make, super easy to prepare, and tastes great both hot and cold—perfect for picnics, garden parties, or even meal prepping on the go !🍴
I especially love how uncomplicated the ingredients are and how easy it is to vary the dish. And let's be honest: potatoes always work, right? 😄
