I've made this recipe countless times, varying it a little each time—and that's exactly what makes it special for me: It's totally flexible, incredibly delicious, and healthy too! 🥰

Ingredients: Simple, quick and absolutely suitable for everyday use

🥗 For the bowl: Chickpea Couscous Bowl

  • 1 can of chickpeas

  • 250 g couscous

  • 1 broccoli

  • 1 lime

  • Fresh parsley

  • Salt

  • Spices of your choice (e.g. paprika, cumin, turmeric…)

  • Optional: 1 avocado

  • Optional: Sesame seeds for garnishing


✨ For the homemade hummus: Make your own hummus

  • 1 can of chickpeas

  • ½ lime

  • Approx. 100 ml water

  • Approx. 50 ml olive oil

  • 2 cloves of garlic

  • Fresh parsley

  • Fresh coriander

It's that easy: Make your favorite bowl in under 30 minutes

Step 1: Prepare the sweet potato and put it in the oven!

First, peel the sweet potato (you can leave the skin on if you like!) and cut it into small cubes. Place it in a baking dish, add a splash of olive oil and your favorite seasonings—in my case, salt, pepper, and paprika. Stir everything well and then bake in the oven at 180 degrees Celsius (350 degrees Fahrenheit) for about 25 minutes.

Step 2: Time for the couscous & broccoli!

While the sweet potato is in the oven, you can prepare the couscous. Simply pour hot water over it, let it steep, and add a little salt if desired. Meanwhile, chop the broccoli and cook it in hot water.

Step 3: Sauté the chickpeas

Now it's time for the chickpeas: Drain and rinse them, and fry them in a pan with a little oil until golden brown, so they get nice and crispy. I seasoned the chickpeas with a little curry powder while frying them—but you can use whatever you like!

Step 4: Make your own hummus Ingredients hummus without tahini

Now comes my absolute favorite part: the hummus! First, you need to drain and wash the chickpeas, then put everything in a bowl. Add 100ml water, 50ml olive oil, 2 crushed garlic cloves, freshly chopped parsley and cilantro, and the juice of half a lime. Blend everything together with an immersion blender or mixer for about 5 minutes until it reaches a creamy consistency. If you like, you can add spices or fresh herbs to taste and garnish!

Step 5: Serve and enjoy

Once everything's ready, it's time to serve! Pour the couscous into the bowl as a base, then top with sweet potato, broccoli, and chickpeas. Add a dollop of hummus to the center, sprinkle with fresh parsley, and for an extra wow factor, garnish with a few slices of avocado or a sprinkle of sesame seeds. Done! 😍
